Whole grain flours contain the minerals, vitamins, enzymes, amino acids, fiber and oils in the same proportions as they are found in the grain. Please note that none of our flours are bleached.
Sifted flours (or light flour in the case of rye) have had most of the bran sifted out. Because the flour still has the germ, the flour has a golden color and the grain’s natural flavor.
We mill our grains at a low temperature which maintains the quality of the nutrients in the flour. The Mill at Weatherbury Farm is registered with the Pennsylvania Department of Agriculture; all products are USDA certified organic.
With Weatherbury’s new Grain Tracker , you have the ability to track Weatherbury’s flours to the field where the grains were grown. Beginning with flours milled on August 11, 2019, Weatherbury’s products will have a QR code label which will allow you to trace your flour back to the field where the grain (which was milled into flour) was grown.

Stone Ground Whole Wheat Bread Flour — Ground in one pass and sifted through a very coarse sieve so that any very large pieces of bran are removed. Hearty stone-ground flour with only the coarsest gran removed. Coarser than sifted flour. Just like Weatherbury’s sifted flour, this flour is not bleached.

Stone Ground Sifted Bread Flour (also known as Stone Ground High Extraction Bread Flour) — Hearty Flavor. Similar to commercial 85% extraction flour The germ is still in the flour and there are some small pieces of bran. Sifted through a fine sieve and ground in multiple passes. The flour contains the grain’s natural flavor and has a golden color (It is not artificially bleached as many commercial white flours are).

Appalachian Bread Flour has a white color and a milder flavor than Weatherbury’s Bread Flour (milled from Maxine).

Stone Ground Appalachian Whole Bread Flour — Whiter stone ground bread flour with a milder flavor; only the coarsest bran has been removed. Ground in one pass and sifted through a very coarse sieve so that any very large pieces of bran are removed. Coarser than sifted Appalachian Bread flour. This flour is not bleached.
Use in pizza crusts, white bread (both pan & sourdough) , brioche, and baguettes where a lighter colored bread is desired.

Stone Ground Light Rye Flour — Milled in multiple passes through a fine sieve. Bran is removed; however the germ remains. Used in many breads and baked goods for a subtle delicate flavor and texture.

Spelt is one of the three ancient hulled wheats. Oberkulmer, an old Swiss landrace, is a pure spelt with no modern wheat genetics.
Prized for its superior nutrition, Weatherbury’s Oberkulmer spelt has a lovely nutty flavor.
Used in breads, rolls, cookies, cakes, pizza crusts, pasta, pancakes, and scones.
Stone Ground Whole Spelt Flour — Ground in one pass and sifted through a very coarse sieve so that any very large pieces of bran and hulls remaining are removed (most of the hulls are removed in a separate dehulling operation). Many people with wheat issues find that they can tolerate spelt. This flour is not bleached.

Stone Ground Open Pollinated Polenta — Coarsely ground, mainly yellow but with red flecks that make it visually interesting. The flavor is enhanced because it is stone ground from an open pollinated, non-GMO corn. Unlike hominy grits, our corn is not treated with lye.
Serve warm with butter and/or cheese. Or let it set up to use as polenta in another recipe.
