At Weatherbury Farm, we grow all the certified organic grains we stone-mill into a tempting array of delicious organic whole and sifted flours. We also offer rolled grains, grain berries and beans grown on the farm.
Whole grain flours contain the minerals, vitamins, enzymes, amino acids, fiber and oils in the same proportions as they are found in the grain.
Sifted flours (or light flour in the case of rye) have had most of the bran sifted out. Because the flour still has the germ, the flour has a golden color and the grain’s natural flavor. Similar to commercial 85% extraction flour.
None of our flours are bleached.
Trace Weatherbury’s flours to the field where the grains (which were milled into flour or rolled into flakes) were grown with Weatherbury’s Grain Tracker .
All of Weatherbury’s flours are milled to order and available at our on farm pickup. Weatherbury’s flours, milled products, berries and dried beans can be ordered on our order page for the on-farm pickup.
Flours, milled products, berries and dried beans are also available by mail order.
Weatherbury Flours are real food and pantry moths find them tasty.
Although there are organic pesticides, we do not use them, either on the grains in the field or the products we mill. Therefore the flour, rolled products or berries should be stored in the refrigerator. If you will not be using immediately, keep in the freezer, especially in warm weather.
We have had reports from customers that even after two years they still work and taste great. We wouldn’t, however, recommend storing them that long.
Otherwise even if you store them in a tightly lidded bucket, you will open your bucket and find pantry moths and/or weevils slipping into what you thought was an impenetrable space. If you have been using organic flours, milled products & berries and there are no bugs, then an organic pesticide has been used.
Keep the beans in a cool, dark, dry place. Dry beans will, over time, take longer to cook (but they still have great flavor).

Hearty stone-ground flour with only the coarsest bran removed. Coarser than sifted flour. Just like Weatherbury’s sifted flour, this flour is not bleached.

Stone Ground Organic Maxine Sifted Bread Flour — Hearty Flavor. Similar to commercial 85% extraction flour. The germ is still in the flour and there are some small pieces of bran. Sifted through a fine sieve and ground in multiple passes. The flour contains the grain’s natural flavor and has a golden color (It is not artificially bleached as many commercial white flours are).

Appalachian Bread Flour has a white color and a milder flavor than Weatherbury’s Bread Flour (milled from Maxine).
Use in pizza crusts, white bread (both pan & sourdough) , brioche, and baguettes where a lighter colored bread is desired.

Please note, that Weatherbury’s Oat Flour is processed in our mill, where we also process grains with gluten. We do clean out our mill between flours (thus, after flours containing gluten), and mill it after corn (which is also gluten free), but it cannot be considered gluten free and should not be used by people who are gluten intolerant or have celiac’ s disease.

Spelt is one of the three ancient hulled wheats. Oberkulmer, an old Swiss landrace, is a pure spelt with no modern wheat genetics.
Prized for its superior nutrition, Weatherbury’s Oberkulmer spelt has a lovely nutty flavor.

Stone Ground Organic Open Pollinated Cornmeal — More finely ground than polenta. Yellow with some red flecks. Milled at a low temperature, it maintains the nutrients and flavor of the organic open pollinated non-GMO corn.

Stone Ground Organic Open Pollinated Polenta — Coarsely ground, mainly yellow but with red flecks that make it visually interesting. The flavor is enhanced because it is stone ground from an open pollinated, non-GMO corn. Unlike hominy grits, our corn is not treated with lye.
Serve warm with butter and/or cheese. Or let it set up to use as polenta in another recipe.

Merlot Small Red Beans have a slightly sweet, somewhat nutty flavor.
Red beans are a good source of phosphorus, potassium and iron. They’re also an excellent source of dietary fiber and a low-fat source of protein. Red beans also contain phytonutrients which have anti-inflammatory and antioxidant properties.
